Spiced Banana Bread Baked Oatmeal

A new way to enjoy your oatmeal! Works for breakfast or as a healthy dessert.


Ingredients:

  • 3 medium ripe bananas

  • 2 1/2 cup plant milk

  • 1/4 cup maple syrup

  • 1 tsp vanilla extract

  • 2 1/2 cups rolled oats

  • 2 tbsp ground flaxseed

  • 1 tsp cinnamon

  • 1 tsp nutmeg

  • 1/2 tsp ginger

  • 1/2 tsp ground cloves

  • 1/4 tsp salt

  • 1 tsp baking powder

  • Craisins, chopped walnuts and sliced banana for toppings

Method:

  1. Preheat oven to 350C

  2. Mash bananas and combine wet ingredients

  3. Mix dry ingredients

  4. Bake for 30-35 mins

  5. Broil for 1-2 mins (keep a close eye)

  6. Add toppings of choice and enjoy!

Tip:

  • Try topping it with peanut butter and plant-based yogurt!
