Pasta Puttanesca

Delicious and hearty plant-based pasta recipe by my friend Greta Sieven.


Ingredients

  • 1 box of whole wheat pasta

  • 3 tbsp olive oil

  • 5 cloves of chopped garlic

  • 2 diced yellow onions

  • 5 cups of diced cherry tomatoes

  • 1/3 cup of chopped capers

  • 1 cup of chopped kalamata olives

  • 1/2 cup chopped parsley

  • 1/2 cup sun dried tomatoes

  • 2 tbsp maple syrup

  • 1 tsp salt

  • 1 tsp chili flakes

  • Nutritional yeast as a topping (optional)


Instructions

  1. Cook pasta as per instructions on the box

  2. Sauté garlic and onion in oil until translucent

  3. Add all the other ingredients

  4. Simmer for one hour on low heat and continue to stir and add water as needed to avoid drying (used 1/4 cup of water)

  5. Sprinkle nutritional yeast on top (optional)

  6. Serve and enjoy!
