Chickpea Omelette

Great breakfast recipe as a replacement for egg omelette.

  • 1/4 cup chickpea flour

  • 1/4 tsp salt

  • 1/8 tsp baking soda

  • Spices & herbs of choice

  • 1/3 cup water

  • 1/4 cup of veggies of choice

  • 1 tbsp nutritional yeast (optional)


  1. Mix chickpea flour, salt, baking soda, nutritional yeast (optional), spices & herbs of choice and water and stir.

  2. Dice up veggies and sauté them on a pan.

  3. Mix sautéed vegetables into the batter and pour the batter on a nonstick pan on medium heat.

  4. Cook for about 5 mins (put a lid on for last 1-2 mins to help cook evenly). Then flip and cook for 3-5 mins until cooked.

  5. Optional: Top with vegan cheese or nutritional yeast and fold over.


  • Replace salt with black salt for more eggy flavour.

  • Use no-oil option to keep calories low.
