Great breakfast recipe as a replacement for egg omelette.

1/4 cup chickpea flour
1/4 tsp salt
1/8 tsp baking soda
Spices & herbs of choice
1/3 cup water
1/4 cup of veggies of choice
1 tbsp nutritional yeast (optional)
Mix chickpea flour, salt, baking soda, nutritional yeast (optional), spices & herbs of choice and water and stir.
Dice up veggies and sauté them on a pan.
Mix sautéed vegetables into the batter and pour the batter on a nonstick pan on medium heat.
Cook for about 5 mins (put a lid on for last 1-2 mins to help cook evenly). Then flip and cook for 3-5 mins until cooked.
Optional: Top with vegan cheese or nutritional yeast and fold over.
Replace salt with black salt for more eggy flavour.
Use no-oil option to keep calories low.
